Aconcagua Valley
We continue our journey, this time heading to the Aconcagua Valley, located in the central region of Chile, a place steeped in history, culture, and extraordinary flavors. This valley, which takes its name from the majestic Mount Aconcagua, is a true emblem of our identity. It was here, in the town of Putaendo, that an important historical milestone took place: the first free town in Chile. This event, which marked a turning point in our history, is reflected today in the free and creative spirit of the people who live and produce in this region.
The Aconcagua Valley stretches from the mountains to the coast, spanning a range of climates and landscapes that make it a unique place for the production of food and beverages. During our travels, we immersed ourselves in the richness of this land, exploring every corner in search of authentic products that represent the soul of the valley.
Aconcagua Coast
Our journey began in the coastal area of the valley, where the cool climate and the influence of the sea allow for the production of white wines of exceptional quality. We visited wineries like Herrera Alvarado, where we learned about their “cuero de vaca” (cowhide) wine, which is fermented in leather and aged in raulí barrels. It stands out for its vibrant acidity and its ability to accompany intense meat dishes.
In this region, we also encountered the famous lúcuma and local olives, ingredients that fit perfectly into our wood-fired cuisine, naturally enhancing the flavors. In addition, we explored cheese empanadas and the production of artisanal oils, immersing ourselves in the family traditions that bring these products to life.
Aconcagua Mountains
From the coast, we ascended into the mountainous area, where the low temperatures and awe-inspiring landscapes gave our experience a new dimension. Here, we gathered fresh trout directly from fish farms and learned to grill this emblematic product, highlighting its freshness and flavor.
We also visited producers of jerky and rabbit meat. These meetings, filled with authenticity, connected us with the traditions that make this valley such a special place.
The Journey and the Table
Each encounter with local producers—whether in the wineries, fish farms, or small farms—allowed us to gather unique ingredients: from the coastal Chardonnay to the Panquehue Cabernet Sauvignon. Each of these products has a place in our kitchen, transformed by fire into dishes that tell stories. From a horse casserole to desserts made with nopal and paired with a Moscatel de Alejandría pet-nat, every bite is a celebration of this valley.
Finally, we concluded this journey with a tribute to ancestral recipes, guided by “Abuela Sara,” a guardian of Putaendo’s culinary memory. Her stories and preparations connected us with the past, inspiring us to bring the essence of Aconcagua into every dish we serve today.
With the flavors, stories, and knowledge of the Aconcagua Valley, we return home ready to share with our diners an experience that goes beyond cooking. It is a journey of discovery and connection with our roots, a reflection of the free and creative spirit that defines 99.
